Perfect Lunch Bowl

  • 2 boneless, skinless chicken breasts, grilled and sliced
  • 4 cups mixed lettuce leaves, washed and torn into bite-sized pieces
  • 1 cup broccoli florets, blanched
  • 1 cup green beans, trimmed and blanched
  • 2 boiled eggs, sliced
  • 1 cup grated carrots
  • 1 cup grated cabbage
  • 1/2 cup whole pecans
  • Fresh basil leaves for garnish

For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste


1. Prepare the Grilled Chicken:

  • Preheat the grill or grill pan over medium-high heat.
  • Season the chicken breasts with salt, pepper, and a little olive oil.
  • Grill the chicken for about 6-7 minutes per side or until cooked through. Let it rest for a few minutes before slicing into thin strips.

2. Prepare the Vegetables:

  • In a pot of boiling salted water, blanch the broccoli and green beans for 2-3 minutes until they are bright green and slightly tender. Drain and set aside.

3. Prepare the Dressing:

  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper until well combined. Adjust the seasoning according to your taste.

4. Assemble the Lunch Bowl:

  • In each bowl, arrange a generous handful of mixed lettuce leaves as the base.
  • Divide the grilled chicken slices, blanched broccoli, green beans, boiled egg slices, grated carrots, grated cabbage, and whole pecans evenly among the bowls.
  • Drizzle the dressing over the top of each bowl.

5. Garnish and Serve:

  • Garnish the bowls with fresh basil leaves for a burst of flavor and aroma.
