Ingredients:
- 400g wholegrain tagliatelle pasta
- 1 cup dried tomatoes in oil, drained and sliced
- 1 red bell pepper, sliced
- 1 cup broccoli, diced and blanched until al dente
- 2 boneless, skinless chicken breasts, grilled and diced
- 1 cup grated Parmesan cheese
- 1/4 cup extra virgin olive oil
- 3 cloves garlic, minced
- Salt and black pepper to taste
- Fresh basil or parsley for garnish
Step 1: Prepare the Ingredients
- Cook the wholegrain tagliatelle pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add sliced red peppers and cook until they begin to soften.
Step 2: Cook the Chicken
- Add the diced grilled chicken to the skillet and toss until heated through.
- Season with salt and black pepper to taste.
Step 3: Combine Vegetables and Pasta
- Add the drained, sliced dried tomatoes and diced blanched broccoli to the skillet. Mix well.
- Add the cooked wholegrain tagliatelle pasta to the skillet, tossing everything together until well combined.
Step 4: Finish and Garnish
- Sprinkle grated Parmesan cheese over the pasta and toss until the cheese is melted and coats the pasta evenly.
- Adjust the seasoning if necessary.
- Garnish with fresh basil or parsley for a burst of freshness.
Step 5: Serve
- Divide the Mediterranean Chicken Pasta into individual serving plates.
- Optionally, drizzle with a bit of extra virgin olive oil and sprinkle extra Parmesan on top.
