Luscious Linguini with Shrimp and Fresh Veggies

  • 12 oz whole grain linguini
  • 1 lb large shrimp, peeled and deveined
  • 1 bunch fresh asparagus
  • 1/2 can coconut milk
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • 1/2 cup coconut cream
  • 1/4 cup unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup halved cherry tomatoes
  • Fresh oregano leaves, for garnish


1. Cook the Linguini: Cook the whole grain linguini according to the package instructions until al dente. Drain and set aside.

2. Prepare the Shrimp and Asparagus: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp and cook until they turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside. In the same skillet, add another tablespoon of butter. Add the asparagus and sauté for 3-4 minutes until tender yet crisp. Remove the asparagus from the skillet and set aside.

3. Make the Creamy Coconut Sauce: In the same skillet, pour in the coconut milk and coconut cream. Stir in the grated Parmesan cheese, garlic powder, paprika, salt, and pepper. Cook the sauce over medium-low heat, stirring constantly, until it thickens and becomes creamy, about 3-4 minutes.

4. Combine the Pasta, Shrimp, Asparagus: Add the cooked linguini, cooked shrimp, and sautéed asparagus to the creamy coconut sauce. Toss everything together until well coated with the sauce.

5. Add the Cherry Tomatoes:Gently fold in the halved cherry tomatoes. The residual heat will warm the tomatoes slightly, ensuring they remain crisp and fresh.

6. Serve: Divide the creamy linguini mixture among plates. Garnish with extra grated Parmesan cheese and fresh oregano leaves.
