When 3pm ticks around it can be awfully hard to avoid a little pick me up in the form of something sinfully fatty, sugary or salty. Well, this week we have just the perfect snack that will leave you feeling satisfied and guilt free. These are super easy to make, and can be made ahead of time and kept in the fridge or even the freezer.
Apricot Coconut Bliss Balls
- 200g dried apricot
- 1/2 cup almond meal
- 1 cup shredded coconut
- 3 tbsp maple
- Extra shredded coconut for rolling
Method:
Place all ingredients (minus the extra coconut) into a food processor and blend. Use one heaped teaspoon of mixture and roll into a ball using your hands. Coat the ball in the extra coconut. Place finished bliss balls into an airtight container and refrigerate.
