These tasty bowls are one of our favorite summer dinners! I love the contrast of the sweet, refreshing peach salsa with the creamy avocado and salty halloumi.

Ingredients
- 1 recipe Coconut Rice:
- 1 cup uncooked long grain brown jasmine rice, rinsed
- 1 (14-ounce) can full-fat coconut milk*
- ½ teaspoon sea salt
- Juice and zest of 1 lime
- ½ cup chopped cilantro
- Chopped cashews
- Instructions:
- Combine the rice and coconut milk in a pot and bring to a boil. Cover, reduce the heat, and simmer for 15 minutes, or until the liquid is absorbed.
- Remove from the heat and let sit, covered, for 10 minutes. Fluff with a fork.
- Use in your favorite recipe that calls for coconut rice, or stir in the salt, lime juice and zest, and cilantro. Season to taste. Sprinkle with cashews and serve as a side dish.
- Notes:
- *For fluffier rice with a milder coconut flavor, use a mix of coconut milk and water. Replace the can of coconut milk with 3/4 cup water and 3/4 cup coconut milk.
- 1½ cups cooked black beans, drained and rinsed
- 1 recipe Grilled Halloumi, 3 to 4 slices per bowl
- Ingredients:
- 6 to 8 ounces halloumi cheese
- Extra-virgin olive oil
- Instructions:
- Preheat a grill or grill pan to high heat. Slice the halloumi into ½-inch-thick planks. Rub both sides with olive oil and place on the hot grill. Reduce the heat to medium and grill for 2 to 3 minutes per side, or until well-charred.
- 2 ripe avocados, sliced
- 1 recipe Peach Salsa:
- Ingredients:
- 2 to 3 ripe peaches, pitted and diced
- ½ red bell pepper, diced
- ¼ cup diced red onion
- ¼ cup chopped fresh cilantro
- Juice and zest of 1 lime
- 1 small garlic clove, grated
- ½ jalapeño pepper, minced
- ¼ teaspoon sea salt, plus more to taste
- Instructions:
- In a medium bowl, mix together the peaches, bell pepper, onion, cilantro, lime juice and zest, garlic, jalapeño, and salt. Season to taste and chill until ready to use.
- Cilantro Lime Dressing:
- Ingredients:
- 2 cups fresh cilantro
- 1 garlic clove
- ¼ cup lime juice
- 2 teaspoons maple syrup or honey
- ½ teaspoon ground coriander
- ½ teaspoon sea salt
- ½ cup extra-virgin olive oil
- Make it creamy (Optional):
- 1 avocado or ½ cup plain whole milk Greek yogurt.
- Instructions:
- In a food processor, place the cilantro, garlic, lime juice, maple syrup, coriander, and salt and pulse to combine. With the blade running, pour in the olive oil and process until smooth.
- Make it creamy (optional) – blend with 1 avocado or ½ cup plain whole milk Greek yogurt
- Fresh cilantro and/or mint leaves, for garnish
- Sea salt, to taste
- Lime wedges, for serving
Instructions
- Prepare the individual components according to each recipe linked above.
- Assemble bowls with the rice, beans, halloumi, and avocado. Top with scoops of the peach salsa and drizzle with the cilantro lime dressing. Garnish with more herbs. Season to taste and serve with lime wedges.
