Beef and Vegetable Stir-Fry

Ingredients:

  • 400g lean beef strips
  • 1 large broccoli head, cut into florets
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 large onion, sliced
  • 100g baby corn
  • 150g mushrooms, sliced
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons olive oil
  • 1 teaspoon fresh ginger, minced
  • 2 garlic cloves, minced
  • 4 green onions, chopped
  • 1 tablespoon honey (or a natural sweetener of choice)
  • Salt and pepper to taste

For the Glaze:

  • ¼ cup low-sodium soy sauce
  • 2 tablespoons water
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon honey (or a natural sweetener of choice)
  • 1 teaspoon potato starch, dissolved in 1 tablespoon of cold water

Instructions:

  1. In a bowl, whisk together the soy sauce and cornstarch. Add the beef strips and toss to coat. Set aside to marinate for 10 minutes.
  2. Heat the olive oil in an iron skillet over medium-high heat. Add the beef and stir-fry until browned and just cooked through. Remove the beef and set aside.
  3. In the same skillet, add a little more oil if needed. Stir-fry the ginger and garlic for about 30 seconds until fragrant.
  4. Add the broccoli, bell peppers, onions, and baby corn. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Add the mushrooms and continue to stir-fry for another 2 minutes.
  6. Return the beef to the skillet with the vegetables.
  7. For the glaze, combine the soy sauce, water, rice vinegar, sesame oil, and honey in a small bowl. Pour over the stir-fry and bring to a simmer.
  8. Stir in the dissolved cornstarch and cook for another 2 minutes, until the sauce thickens and creates a healthy glaze over the ingredients.
  9. Season with salt and pepper to taste, and sprinkle with chopped green onions before serving.
