Ingredients
- 2 slices of wholegrain bread
- 1 ripe avocado, mashed
- 1 large egg
- Handful of fresh spinach leaves
- Salt and pepper, to taste
- Optional: lime juice; a dash of hot sauce or your favorite spice for added flavor
Instructions
- Prepare the Avocado Spread:
- Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with a fork until smooth.
- Season with a pinch of salt and pepper. You can also add a squeeze of lime juice for extra flavor, if desired.
- Cook the Egg:
- Heat a non-stick skillet over medium heat and spray it with cooking spray or add a small amount of oil.
- Crack the egg into the skillet and cook it to your preference (fried, scrambled, or poached).
- Season the egg with salt and pepper to taste.
- Prepare the Spinach:
- In the same skillet, add the fresh spinach leaves.
- Cook for 1-2 minutes, just until wilted. Season with a pinch of salt and pepper.
- Toast the Wholegrain Bread:
- Toast the wholegrain bread slices to your desired level of crispiness.
- Assemble the Sandwich:
- Spread the mashed avocado evenly onto one side of each toasted bread slice.
- Place the cooked egg on top of the avocado spread on one slice of bread.
- Layer the sautéed spinach on top of the egg.
- Top with the second slice of bread, avocado side down, to create a sandwich.
- Optional: Add Spice (If Desired)
- If you like a bit of heat, add a dash of hot sauce or your favorite spice on top of the spinach before closing the sandwich.
- Serve and Enjoy:
- Slice the sandwich diagonally, if desired, and serve immediately.
