A Healthy Breakfast Sandwich

Ingredients

  • 2 slices of wholegrain bread
  • 1 ripe avocado, mashed
  • 1 large egg
  • Handful of fresh spinach leaves
  • Salt and pepper, to taste
  • Optional: lime juice; a dash of hot sauce or your favorite spice for added flavor

Instructions

  1. Prepare the Avocado Spread:
    • Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl.
    • Mash the avocado with a fork until smooth.
    • Season with a pinch of salt and pepper. You can also add a squeeze of lime juice for extra flavor, if desired.
  2. Cook the Egg:
    • Heat a non-stick skillet over medium heat and spray it with cooking spray or add a small amount of oil.
    • Crack the egg into the skillet and cook it to your preference (fried, scrambled, or poached).
    • Season the egg with salt and pepper to taste.
  3. Prepare the Spinach:
    • In the same skillet, add the fresh spinach leaves.
    • Cook for 1-2 minutes, just until wilted. Season with a pinch of salt and pepper.
  4. Toast the Wholegrain Bread:
    • Toast the wholegrain bread slices to your desired level of crispiness.
  5. Assemble the Sandwich:
    • Spread the mashed avocado evenly onto one side of each toasted bread slice.
    • Place the cooked egg on top of the avocado spread on one slice of bread.
    • Layer the sautéed spinach on top of the egg.
    • Top with the second slice of bread, avocado side down, to create a sandwich.
  6. Optional: Add Spice (If Desired)
    • If you like a bit of heat, add a dash of hot sauce or your favorite spice on top of the spinach before closing the sandwich.
  7. Serve and Enjoy:
    • Slice the sandwich diagonally, if desired, and serve immediately.
    • Enjoy your wholesome and nutritious breakfast sandwich with a side of fresh fruit or a smoothie for a complete and balanced meal.
